The philosophy on the basis of our Little Kitchen is centered on the perpetual reserch of high quality raw materials, in order to offer our customers typical dishes of the Roman tradition, with some little, original and modern touches.
At our farm, Treefarm, we grow and produce, sometimes in partnership with other farmers sharing our philosophy, various whole and genuine ingredients to bring to our family and Treebar tables.
We follow a food philosophy based on hand – made, fresh and healty food products, in opposition to the big distribution model of industrial products.
We bake our own Bread, Focacce, Bread sticks, Calzoni and Pizza on a daily basis, and to do that we only choose high quality ingredients. Our doughs are all high digestible and slow rising, made with natural yeast and SEMI – WHOLE, BIO FLOURS, stone – ground by ourselves. For our stuffs we use whole sea salt, bio tomato puree, bio fior di latte, from Tuscia, Cetara anchovies, traditional DOP cold cuts, daily fresh vegetables and our own exclusive EXTRA VIRGIN OLIVE OIL, obviously produced by ourselves.
Our BEER, HAND- BREWED, RAW AND LOCAL, is produced, using the wheat of our fields and our own barley malt, by a little brewery sharing our same production philosophy. Our beers are CHIARA, ROSSA, BIANCA and APART.
Our HOUSE WINE is produced in our farm, Treefarm, following an efficient agronomic management, without using chemical products. Our production methods are biologic and certified under the european law.
Our objective is to bring on our tables high quality products while respecting the environment, pointing on the sustainability of our production chain.
We bottle our wine in numbered Magnum bottles, containing 1,5 lt, repurposing and reusing km 0 bottles, washed and sanitized with no other chemical products than ozone, a natural sanitizer that disappears in the environment becoming oxigen.
We even make the boxes to transport our wine bottles by repurposing scrap pallets.
